Also, does the content that I build in this new experimental local host site populate into one of the six databases that are come with this version?

Joomla only uses and populates one database schema, the one you created before installing Joomla 5.2 and the details of which you entered as part of the installation process. The rest like Information_schema are maintained by MySQL in the background.
